Developing a local capacity for processing local beef is the most direct avenue for building a sustainable agricultural sector for northern Arizona’s economy. Because beef production is a well-established business, the development of a processing capacity in northern Arizona is the surest way to create a value-added component to the existing agricultural economy.
However, like many new enterprises, beef processing has its own set of complications.
